The olive grove where it all began

In 1890, Don Ángel Cavagnaro planted the Arauco olive trees that still shape Verde Oliva's landscape today. More than a century later, they continue to bear fruit: their olives are pressed on the day of harvest to make our single-varietal extra virgin olive oil. "Est. 1890" celebrates this living origin. Since 2010, we have also shared it with those who choose to stay at the estate.

A home that learned how to welcome

Verde Oliva began as the home of Julia Moreno and Javier Vallesi. They arrived in 2001, created the gardens and restored the old estate buildings. In 2010 they welcomed their first guests and, little by little, began opening the spaces of their family life: the living room became the restaurant, the kitchen became the massage room and their bedroom became the Manzanilla room. The estate grew this way, intimately and naturally, around the pleasure of welcoming others.

The first seven rooms occupy the historic buildings where the workers of the Cavagnaro estate once lived. Restored with respect for their history, they retain their original thick walls, naturally cool during the Mendoza summer. Staying here means inhabiting an authentic part of the estate's history for a few days.

2001 to 2010

When Verde Oliva was beginning to take shape

Only a few family photographs remain from the years between the family's arrival and the opening of their home to its first guests: newly cut irrigation furrows, the old walls before their restoration and the trenches from the first building works. They are simple images from the time when a family home was beginning to become Verde Oliva.

The historic tree

A tree that chose to stand tall

Beside the fire pit lives the estate's oldest inhabitant: an aguaribay more than 300 years old, older even than the olive grove. In August 2009 it burned from within for 19 hours, but the family decided to preserve it. The tree survived and, since 2011, has been recognised as a Historic and Notable Tree of the Province of Mendoza.

From the estate to the table

Wine, olive oil and flavours born here

At Verde Oliva, hospitality grows from the land. Our vineyard gives rise to Vallesi Malbec; the historic olive grove produces our extra virgin olive oil and an olive-based cosmetics line. In the restaurant, reserved for those staying at the estate, these products come together around the table. A stay at Verde Oliva is a chance to spend a few days within a working wine and olive estate.

The home Julia and Javier opened in 2010 is now held up by many hands. Those who tend the gardens and the olive grove, prepare the rooms, cook and welcome guests at the table are part of the same story. Each of them puts their heart into their work so that every guest feels at home at Finca Verde Oliva.
